Founded in 2003 by Chef René Redzepi, the Copenhagen restaurant Noma works with a network of purveyors to develop a cuisine that expresses its region's culture and seasons. The 11-table restaurant is housed within an eighteenth-century warehouse along the city's harbour and serves a 20-serving tasting menu designed to give guests a clear and delicious sense of time and place. Restaurant Noma was named the no. 1 best restaurant in the world by St. Pellegrino in 2010, 2011, 2012 and 2014.
